This recipe for non-dill pickles features ribbons of cucumbers in a simple pickling mix with bay leaves and peppercorns.


  • ⅔ cup apple cider vinegar

  • ¼ cup plus 2 tablespoons granulated sugar

  • ¼ cup plus 1 tablespoon water

  • ½ teaspoon fine sea salt

  • ½ teaspoon whole black peppercorns

  • 2 bay leaves

  • 1 cucumber


Combine all of the ingredients except the cucumber in a saucepan. Bring to a boil, stirring to dissolve the sugar and salt. Remove from the heat and let cool completely.

Trim the ends from the cucumber. Thinly slice lengthwise. Put in a storage container and pour over the pickling liquid.

Cover and refrigerate for 24 hours before serving.
