Goma Dressing

A bowl of goma dressing which is a blend of sesame seeds, miso, soy sauce, mirin, and lime juice among other things.

Makes 1¾ cups

  • ¼ cup plus 2 tablespoons toasted white sesame seeds, plus additional for garnish

  • ¼ cup plus 2 tablespoons canola oil or other neutral oil

  • ½ cup plus 2 tablespoons water

  • 2 tablespoons soy sauce

  • 2 tablespoons miso, preferably red miso

  • 1½ tablespoons mirin

  • 2 teaspoons lime juice

  • ½ teaspoon toasted sesame oil

  • ½ teaspoon rice wine vinegar

  • ¼ teaspoon agave syrup

  • ¼ teaspoon finely chopped garlic


Put all of the ingredients in a high-powered blender and blend until smooth. Add additional water as needed to thin the consistency.

Transfer to a serving bowl and sprinkle with sesame seeds. Or put in a storage container and refrigerate for up to 3 days.
