When plums are at their peak, make this chunky compote flavored with mirin and coriander.


  • 1¼ pounds plums

  • 1 tablespoon agave nectar

  • ¼ teaspoon fine sea salt

  • ¼ teaspoon ground coriander

  • 2 teaspoons mirin

  • ¼ teaspoon lightly crushed pink peppercorns


Put the plums in a large saucepan over medium heat. Stir often, pressing on the flesh and skins to break down as they soften. Depending on their ripeness, add 1 to 2 tablespoons of water to keep them from burning as the juices release and the fruit softens. Depending on their ripeness it will take 10 to 15 minutes to soften.

Once tender, but not completely broken down, stir in the agave, salt, and ground coriander. Bring back to a simmer and continue to cook, stirring and breaking down until completely softened, about 5 minutes more.

Remove from the heat and stir in the mirin and peppercorns. Season to taste with additional mirin and spices to taste.
