A crisp salad of thinly sliced radicchio, shaved cauliflower, and black olives tossed in our signature lemon dressing and sprinkled with salted almonds.
1 head radicchio
1 large cauliflower floret, about 3 inches across
6 large olives, preferably Cerignola, pitted and coarsely chopped
¼ cup Simple Feast’s Lemon Dressing
⅓ cup roasted salted almonds, coarsely chopped
Remove and discard the outer leaves from the radicchio. Cut in half lengthwise and then remove the core. Cut lengthwise into ½-inch slices. Put in a mixing bowl.
Thinly slice the cauliflower floret lengthwise, preferably on a mandoline (or as thinly as possible with a chef’s knife) and add to the bowl, along with the olives.
Drizzle in the dressing while tossing to coat. Depending on your taste, you may not use all of the dressing.
Transfer to a serving bowl to serve family-style or divide among plates. Sprinkle with the almonds and serve.
